If you haven’t tried the beyond meat products, they are pretty amazing. Here is my take on a plant based local favorite.

Remove from the bag and place in the microwave on high for 2 minutes, check it and heat for another minute.

Garlic Mashed Potatoes

Garlic Mashed Potatoes

We use a plant based butter and lots of garlic to make these yukon mashed potatoes taste amazing!

Place the whole bag in a pot of simmering water for 10-12 minutes. Or remove from the bag and place in a microwave on high for 2-3 minutes.

Butternut Squash Parmesan, with Tomato, Basil, & Melted Mozzarella

Butternut Squash Parmesan

This is a way to really kick up a parmesan by using squash instead of eggplant.

Heat right in the microwave safe container for 2-3 minutes on high.

Brussels sprouts with caramelized onions & balsamic reduction

Brussels Sprouts

I blanch these in salted water and toss with caramelized onions and balsamic. It goes perfect with the Squash parmesan or even the hamburger steak.

Microwave on high for 2 minutes or until heated through.

Cavatelli Pasta with Blistered Ho Farm Tomatoes, Garlic, & Extra Virgin Olive Oil

Cavatapi Pasta

Tossed with olive oil, garlic parsley and tomatoes, this funny shaped pasta has become my favorite to cook with right now.

Remove from the bag and place in a bowl, cover with plastic wrap and Microwave on high for 2 minutes.

Hawaiian Tomato Soup with Backyard Basil Pesto

Hawaiian Tomato Soup

One of my favorite soups to make. I use local tomatoes and cook them down with leeks, garlic, and veggie broth. Then blend the whole thing together with some fresh thyme.

Empty contents into a soup pot and heat over medium heat about 10 minutes. Adjust seasoning with a bit of salt if needed. Top with basil pesto.
