Grilled Vegetable and Mozzarella Sandwich

Ingredients
4 Slices Bread
4 tbsp Il Villaggio Pesto (The Inspired Chef Product)
1 Zucchini
1 Yellow Squash
1 Eggplant
1 Tomato, Sliced
1 Cucumber, Thinly Sliced
1 Mozzarella Cheese, Sliced
4 Leaves Lettuce
Matiz Piquillo Peppers, Cut in Thin Strips (The Inspired Chef Product)
Snowdonia Balsamic Caramelized Onion Chutney (The Inspired Chef Product)
Villa Manodori Olive Oil (The Inspired Chef Product)
Italian Seasoning
Directions
Cut zucchini, yellow squash and eggplant on an angle into ¼” thick slices, toss each vegetable separately in a bowl with olive oil and Italian seasoning, grill and set aside.
Toast bread and spread with pesto and top with a leaf of lettuce, shingle all the vegetables alternately on top with sliced mozzarella, garnish with piquillo peppers and caramelized onion chutney.
