Coho Salmon with Pesto Pasta

Ingredients

4 Coho Salmon Fillets center cut 8 oz  

Il Villagio Pesto 

½ bag Cipriani Penne Pasta 

2 tbsp Butter 

½ cup Pecorino Romano Parmesan Cheese 

20 spears Asparagus 

1 cup Bio Orto Red Datterini Tomatoes 

Directions

Place salmon on a baking sheet, generously coat with pesto spread, bake under broiler for 8-10 min, until fish is flakey when lightly pressed. Do not overcook. 

Cook penne pasta in generously salted water, when done save some of the pasta water, drain the pasta, place back in the pot with butter and pesto, add parmesan and some pasta water. 

Place pasta in a bowl, top with salmon and garnish with blanched asparagus and blistered Datterini tomatoes.
