Chicken Boscaiola
This plant based chicken is one of the better ones I have tasted. This sauce is a great portobello mushroom sauce that we used to have on the menu at Sarentos Top of the Ilikai when I was the sous chef under Donato Loperfido. Enjoy!
Pour the sauce into a sauce pot and heat over medium heat for about 5-7 minutes and adjust with a little salt if needed. Place chicken in the oven at 350 degrees for 5-7 minutes to reheat or microwave on hight for 2 minutes. Place chicken on a platter and top with sauce.

Sun-dried Tomato Orzo
This pasta is great served cold as a pasta salad or hot as an accompaniment to the chicken.
Remove from the bag and heat the orzo in a microwave for 2 minutes stir and heat another 30 seconds on high.

Garlic Buttered Ewa Corn
We steam the sweet local corn and then toss with a plant based butter and tons of garlic.
Drop the entire bag unopened into a pot of simmering water for 10-12 minutes. Open the bag and serve.

Tofu Skewers
These skewers are great with the spicy peanut sauce and goes great over the coconut basmati rice.
Place the skewers on a baking sheet and heat at 350 degrees for 5-7 minutes or place in microwave for 2 minutes.

Maui Onion Soup
My play on a plant based version using the sweet onions of Maui. I cooke the onions down slowly with red wine, thyme, and veggie broth giving lots of flavor to this twist on a classic.
Empty contents into a soup pot and heat over medium for 8-10 minutes.

Coconut Basmati Rice
This is such a flavorful rice. I love how it welcomes these grilled tofu skewers to the party!
Remove from the bag and place the rice in a bowl with a damp paper towel over it. Then put in the microwave on high for 2 minutes

Apple-Balsamic Poached Pears
An upscale classic is brought to your table with these red wine, balsamic, apple, and cinnamon poached pears. You can eat them cold or warm them up and serve over some almond milk ice cream!
Place the entire bag, unopened, into a pot of simmering water for 7-8 minutes. Open bag and pour the pears right onto your platter.

Chilled WaterCress, Leek, & Potato
A play on classic Vichysoisse soup. Basically a chilled leek and potato soup blended with watercress. So refreshing on a hot day.
Serve cold or warm slowly in a soup pot over medium heat for 8-10 minutes.
