Whole Grain Mustard Braised Short Ribs Accompanied by Simplot Baby Bakers

-Ingredients
- 1 # Bone-in beef short ribs (about 4 of 5 pieces, thawed)
- 1 tsp Salt
- 2 tsp McCormick white pepper
- ½ tsp McCormick cayenne pepper
- 1 each Chinese star anise
- 2 tbsp thyme
- 4 whole bay leaves
- 2 tbsp olive oil
- 5 tbsp shallots, minced
- 1 tbsp garlic, minced
- 1/3 cup red or white wine
- 1/3 cup good beef broth
- 5 tbsp whole grain mustard
- 3 tbsp Dijon mustard
- 1 # Simplot baby bakers
- Dress short ribs with olive oil, salt, cayenne and white pepper and place in a 400 degree oven till brown.
- Remove browned short ribs and place juices in a brazier (braising pan).
- On medium heat, saute shallot , garlic till translucent.
- Add mustards, thyme, bay leaves and star anise and cook for a minute or so.
- Add wine and beef broth and bring to a quick boil.
- Add browned short ribs in liquid, cover and place inside a 350-degree oven for 1 hour or fork tender.
- Remove and place cooked short ribs on a serving platter. Add potatoes to braising short rib liquid and reduce by 2/3.
- Spoon sauce with potatoes over beef short ribs.
