Poi, Kūlolo & Macadamia Nut Pie


Ingredients

1 cup poi

3 eggs

2/3 cup sugar

1 cup light corn syrup

3 tablespoons melted buter

1 teaspoon vanilla

2 tablespoons cream

1 cup macadamia nut halves

1 cup ground macadamia nuts

1 pound kūlolo, cut into 1-inch pieces

1 unbaked 9-inch pie shell

 

Directions 

Preheat oven to 350°F.

In a mixing bowl, whisk together the poi, kūlolo, coconut milk, brown sugar, eggs, vanilla, cinnamon, and salt until smooth.

Pour the filling into the pie crust.

Top with chopped macadamia nuts.

Bake for 30 minutes at 350F, or until the filling is set and the top is lightly golden.

Let cool (preferably overnight in the fridge)

Top with fresh whipped cream

Cut, serve and enjoy!
