Corned Beef Tacos

Ingredients

12 4-inch White Corn Tortillas

12 ¼” Sliced Cooked Red Crown Corned Beef Brisket (Item#: 117026 Location: ChillZone)

Coleslaw (see below for recipe)

1 cup Cheddar Cheese

1 Sliced Jalapeno

Directions 

Toast tortillas in a dry pan until hot, place on plate, heat the corned beef slices in the same pan, place one slice on each of the tortillas, top with coleslaw, cheddar cheese and garnish with thinly sliced jalapeno.

 

Coleslaw Ingredients

2 cups Green Cabbage finely shredded

½ cup Red Cabbage finely shredded

¼ cup Carrot finely shredded

 

Dressing

½ cup Mayonnaise

1 tablespoon Mustard

1½ tablespoon Cider Vinegar

2 teaspoons Sugar

Salt & Pepper to taste

 

Directions 

Mix all the dressing ingredients. Toss with shredded cabbage and carrots. Season to taste.
