Roasted wild mushroom & truffle pasta

This is a plant based version of an alfredo sauce with mushrooms, kale and truffle oil, over my new favorite pasta, Cavatapi!

Pour the sauce into a sauce pot and heat over medium heat for about 8-10 minutes and adjust seasoning with a little salt if needed. Place pasta in a microwave safe bowl and heat for 2minutes on high. Spoon sauce over pasta and serve.

Blackened spiced tofu steaks

Blackened Spiced Tofu Steaks

We bake the tofu steaks whole first to reduce moisture and concentrate the flavor. Then dust with blackening spices and quickly sear the steaks. Slice and serve with the peperonata and quinoa fried rice!

Place the microwave safe container of tofu in the microwave for 2 minutes on high and serve.

This is a wonderful way to make your fried rice instantly healthier without losing any flavor, by using quinoa and brown rice.

Heat right in the microwave safe container for 2-3 minutes on high.

Pepperonata, slow cooked peppers, with onions, garlic, & capers

Peperonata

This is a great topping or accompaniment for any meal. Marinated roasted peppers with garlic, capers, vinegar, and extra virgin olive oil. I like to serve this cold or at room temperature. It will go great with the tofu steaks.

Serve cold or bring to room temperature and serve.

Grilled garlic bread

Grilled Garlic Bread

This is a healthier way to make garlic bread with tons of flavor. We make a garlic oil and brush the bread before grilling it.

Remove from the bag and place garlic bread in a preheated oven at 350 degrees for 8-10 minutes. If you don’t have time, microwave for 1.5 minutes on high.

A play on classic Vichysoisse soup. Basically a chilled leek and potato soup blended with watercress. So refreshing on a hot day.
