Grilled Vegetable Lasagna, Backyard Basil Pesto, & House Marinara Sauce

Grilled Vegetable Lasagna

This plant based version of lasagna is loaded with flavor from the grilled veggies, basil pesto, marinara sauce, and plant based mozzarella cheese.

Place in the microwave on high for 2 minutes, check it and heat for another minute. If you have the time, remove the lasagna and place on a greased pan. Then place in a 350 degree oven for 15 minutes.

Portuguese Bean Stew with Chickpeas, Purple Cabbage, & Soyrizo

Portuguese Bean Soup

This soup has lots of flavor and is the healthy version of the local classic. Using Chick peas, purple cabbage, and whole grain macaroni are just a few of the healthy ingredients inside.

Place the whole bag in a pot of simmering water for 10-12 minutes. Or cut open the bag and place the contents in a soup pot. Heat over medium heat for about 15 minutes.

Steamed Korean Barley

Steamed Barley

I first tried this at the Palama market and was blown away. Its a fluffy and flavorful rice substitute that goes perfect with the Portuguese bean soup.

Remove from the bag and place in a bowl with a damp paper towel over the barley and then plastic wrap. Microwave on high for 2 minutes.

Roasted Butternut Squash & Baby Portobello Mushrooms

Roasted butternut squash and Mushrooms

Tossed with olive oil, garlic and fresh thyme and then roasted together, these two are a fall season match made in heaven.

Remove from the bag and place in a bowl, cover with plastic wrap and Microwave on high for 2 minutes.
