Potato Gnocchi

These eggless gnocchi are delicious! Served with my beet marinara sauce creation and combined with grilled vegetables, its sure to be a winner at your home.

Place gnocchi in microwave for 1.5 minutes on high. And top with the warm sauce.

Beet Marinara Sauce

Just a healthy twist on your classic marinara. Roasted beets are blended into the sauce and grilled vegetables are folded in as well for an earthy and smokey sauce that goes great with the gnocchi.

Warm in a sauce pot over medium heat until hot. About 5-7 minutes and then spoon over gnocchi.

“Beef” Stir Fry, with Shitake Mushrooms, Peppers & Long Beans

Beef Stir Fry

The beef replacement is called Seitan. Its big in the vegan world as it looks like beef. Its actually a dough that is cut like stir fry meat and soaks up the flavor of the sauce which is bursting with flavor from the peppers, ginger, garlic, and onions.

Place the whole bag in a pot of simmering water for 8-10 minutes and serve

This bread is almost cooked all the way through. So when you finish it in the oven its just like a freshly baked bread.

Place loaf in the oven at 350 degrees for 10 minutes:.

Steamed Jasmine Brown Rice

Jasmine Rice

One of my favorite types of rice for a stir fry. This one is just a bit healthier because it is a brown jasmine.

Remove from the bag and place the rice in a bowl with a damp paper towel over it. Then put in the microwave on high for 2 minutes

Pumpkin Pie Bread Pudding

Pumpkin Pie Bread Pudding

A nice holiday inspired treat adding the flavors of pumpkin pie to this plant based bread pudding can only mean one thing. Its the holidays! This can be eaten cold, but one minute in the microwave and then top with your favorite vegan ice cream will win over the meat eaters in the family for sure.

Cut the bread pudding into slices and place in a microwave safe container, then heat for 1 minute on high. Or place the foil loaf pan in the oven at 350 degrees for 10 minutes and serve. With vegan ice cream of course.
